Hunterdon Land Trust Farmers’ Market Open January 20th 11-1

The land trust’s Farmers’ Market will be open this Sunday the 20th from 11-1 at the Historic Dvoor Farm on the Route 12 Circle. If you’re looking for some new and interesting ways to use all the fresh, local food you buy check out Market Manager Catherine Suttle’s recipe for Steamed Kale with Rice and Eggs. If you don’t have much time, but you want a warm, nutritious lunch using locally available ingredients, give this a try. We’ll have copies available for you on Sunday too!

Catherine’s Steamed Kale with Rice and Eggs

 1 cup of your favorite chicken, vegetable or beef broth, heated to a simmer
2 fresh eggs
2 cups fresh curly kale pulled off the stems, torn into bite sized pieces and steamed
Leftover rice and/or beans, wild rice is the best and any type of beans will do

1. Open one end of each egg and gently drop into the simmering broth, allow them to poach

2. Place the rice and/or beans into a large soup bowl

3. Place the steamed kale on top of the rice

4. Once the eggs are poached, scoop them out with a spoon and place them
on top of the kale

5. Pour the broth over the eggs and enjoy.
